How is this used?

Used in the experiment to break down fat in milk to fatty acids and glycerol. An alkaline solution of full fat or semi-skimmed milk has a few drops of phenolphthalein solution (1%) added to turn the solution pink. Lipase solution (5% w/v) is then added and the time taken to go from pink to white is recorded at different temperatures.
